Parallels Mobile started supporting iOS 4.2 since version 2.2.450. The latest version is available for download from Apple Store (iTunes).

To check which version of Parallels Mobile you are running on your iPad/iPhone/iPod Touch, go to Settings, choose Parallels Mobile from the list and it will show which version you are running.

When you launch Parallels Mobile, it will prompt you to download the latest version automatically.
