Parallels Desktop 7 and Parallels Desktop 8 key will not be shown in licenses.xml file.
Instead, 14-digits secure code will be displayed in the following format: XXXX-XXXXX-XXXXX. This code is called Product ID. You can find more information about it here:

Once you follow the instructions below and locate your Parallels Desktop 7 / Parallels Desktop 8 Product ID, please contact Parallels Customer Support to decode Product ID and get your Parallels Desktop 7 / Parallels Desktop 8 activation key.
RESOLUTION
Your Parallels Desktop license key(s) will be located in the following file:
/Library/Preferences/Parallels/licenses.xml
NOTE: In case you have Mac OS X Lion installed, you need to click on Go in the top Mac menubar, choose Computer and follow the path above.
If you upgraded to the current version of Parallels Desktop from a previous version, all previous keys will also be stored in that file.
You can open the file in the TextEdit application.
The content of the file that holds your key(s) is similar to the one bellow:
